Energy Boosting Super Bar made with Quinoa, Cacao, Coconut Oil & Maca
These super energy bars are the perfect morning breakfast. Made mainly from Quinoa flour, they are not only high in protein and vitamin B2, the presence of coconut oil and maca powder helps to increase your stamina and metabolism while boosting your energy. The delicious cacao which not only packs these bar with chocolatey flavour, it also has 21 times more antioxidants than green tea. So much goodness in one teeny bite. You have to try it to believe it!
Dry ingredients:
1 1/2 cup quinoa flour (Grind 1 1/4 cup of Quinoa grains to a fine consistency)
1 1/2 cup cacao powder
2 tbsp maca powder
1 tsp baking soda
1 tsp salt
2 tsp baking powder
Others:
4 oz unsweetened baking chocolate
2 cups coconut oil
1 2/4 cups sugar
1 2/4 cups brown sugar
6 eggs
2 tsp vanilla extract
Whole almonds
Method:
Prepare 2 thin cake pans and Preheat oven to 170 deg C.
Sift together and set aside all your dry ingredients.
Melt unsweetened chocolate and coconut oil over very low heat and cool well. Stir in sugars, eggs, and vanilla extract.
Stir in dry ingredients. Mix well. Mixture will be sticky.
Spoon batter in equal amounts onto pans and spread to corners of pan. Batter will spread slightly during baking.
Bake 40-45 min or until toothpick inserted in centre comes out clean.
Cool in pans completely. Cut into 2.5 cm x 4 cm bars. Press one whole almond on top of each bar.
