Quinoa Fritters Recipe in 3 Easy Steps by Superlife Co
- 2/3 cup quinoa
- 1 1/3 cups water
- 1/4 cup all purpose flour
- 1/4 cup grated cheese
- Pinch of ground black pepper
- 3/4 teaspoon salt
- 1/2 bunch Italian parsley leaves, chopped
- 1 egg
- 1 egg yolk
- 3/4 cup vegetable oil
1.Wash, drain and add quinoa into a saucepan. Toast quinoa over high heat while shaking pan for 5 minutes. Add water, bring to a simmer and reduce heat to low. Cover and cook until water is absorbed. Set aside.
2.In a large bowl, combine quinoa, flour, cheese, salt and pepper. Add the parsley, egg and egg yolk. Blend thoroughly until the mixture resembles soft dough.
3.Heat oil in a large pan over medium heat. Scoop a ball of batter onto the pan and flatten a little. Fry each side till lightly golden and drain on paper towels. Serve warm with lemon wedges and red salsa.
