Super Recipe – Cherry Walnut Quinoa Salad

In this Friday’s episode of our Super Recipes, we bring to you our cherry walnut quinoa salad! This is a hearty, healthy meal – while we have previously mentioned countless times about the benefits of consuming quinoa (if you have only started following us recently, read some of it here!), walnuts have plenty to boast about as well. For instance, these yummies have cancer-fighting properties, improve heart and brain health, and boost metabolism rates. — Note: Recipe serves 2 Ingredients

  • 1/2 cup trio coloured quinoa
  • 1 cup water
  • 1/4 cup toasted walnuts
  • 10 chilled cherries
  • 1/4 cup loosely packed basil chopped
  • Mustard
  • 1 tbs lemon juice
  • 1/2 tbs honey
  • 1 tbs extra virgin olive oil
  • Salt and pepper to taste
Method 1. In a saucepan, bring the water to a boil. 2. Pour in the quinoa, and cover and simmer for 15 mins. 3. Cool until room temperature. 4. Toss in walnuts, cherries and basil. Mix. This is your salad. 5. In a bowl or plate of appropriate size, prepare the honey lemon vinaigrette by mixing the rest of the ingredients. 6. Drizzle the honey lemon vinagrette over the salad.
