Super Recipe – Maca Pancakes drizzled with Honey

This one goes out to all breakfast lovers, pancake lovers and honey lovers! What better way to indulge in your delights than knowing that you are treating yourself to all the goodness found in maca while doing so? — Note: Recipe serves 2 Ingredients 50g gluten free all purpose flour 50g buckwheat flour 1 tbs maca powder 1 1/2 tsp baking powder Pinch of salt 1 tbs coconut sugar 1 egg 120ml unsweetened soy milk 1 tbs olive oil Honey for drizzling Method 1. Whisk egg with sugar until dissolved (takes about 2 minutes), then whisk in the milk. 2. Sift in the dry ingredients and mix until just combined. 3. Stir in the oil until combined and let batter rest for 5-10 minutes. The batter will be rather thick. 4. Heat a greased non-stick pan on medium heat until a drop of water sizzles upon contact with the pan. 5. Drop one tablespoon of the batter onto the pan and spread it out into a round shape using the back of a spoon. 6. Cook for 2 minutes or until bubbles appear and pop. Flip and cook for another minute. 7. Place the pancake on a wire rack. Repeat with the rest of the batter. — Made this? We’d love to see it!
