Super Recipe – Strawberry Apricot Chia Jam

Ingredients:
200g strawberries 260g apricots ( measured with seed) 2 tbs raw unrefined sugar 1 tsp lemon juice 1/2 tsp pure vanilla extract 1 tbs chia seed
Steps: 1. Remove the seeds in the apricots. Half the strawberries and pitted apricots. 2. Put them in a saucepan along with lemon juice and bring to a boil. 3. Bring it to a simmer and stir occasionally with a wooden spoon until the fruits break down about 20 – 30mins 4. Mash the fruits with the back of the spoon*** 5. turn off the heat and stir in the rest of the ingredients. 6. Store in a glass jar and use within one week. ***mash with the back of a spoon for chunkier texture. ***pass the jam through a sieve for smoother texture or you can blend it at step four.
