Super Recipe: Protein-packed Quinoa Lentil Tabouleh!

  Up your plant protein intake with this delicious Quinoa Lentil Tabouleh! It is beautifully fresh, tangy and savoury; the perfect as an addition to a Mezze platter alongside hummus, tzatziki and warm pita bread. Bring it to a dinner party and impress your friends with this simple dish 😉 This recipe is Vegan AND Gluten-free! Also, you can make it in big batches and save it in the fridge for the next few days.   Ingredients Sauce:

  • 1 cup Extra Virgin Olive Oil
  • 2 cloves of garlic, minced
  • Juice of 1 lemon
  • Salt/Pepper
Salad:
  • 2 1/2 cup cooked Superlife Co. White Quinoa**
  • 1 can of lentils, drained
  • 2 cucumbers, peeled, deseeded & cubed
  • 350g cherry tomatoes, halved
  • 2 stalks of scallions, chopped
  • 1/2 cup mint, chopped
  • 2/3 cup flat leaf parsley, chopped
