
Super Recipe: Protein-packed Quinoa Lentil Tabouleh!
Up your plant protein intake with this delicious Quinoa Lentil Tabouleh!
It is beautifully fresh, tangy and savoury; the perfect as an addition to a Mezze platter alongside hummus, tzatziki and warm pita bread.

This recipe is Vegan AND Gluten-free!

Ingredients
Sauce:
- 1 cup Extra Virgin Olive Oil
- 2 cloves of garlic, minced
- Juice of 1 lemon
- Salt/Pepper
Salad:
- 2 1/2 cup cooked Superlife Co. White Quinoa**
- 1 can of lentils, drained
- 2 cucumbers, peeled, deseeded & cubed
- 350g cherry tomatoes, halved
- 2 stalks of scallions, chopped
- 1/2 cup mint, chopped
- 2/3 cup flat leaf parsley, chopped

Directions
1. Mix all of the sauce ingredients together in a little bowl.
2. Mix all of the salad ingredients together in a big bowl.
3. Pour the sauce all over the salad ingredients and mix everything together!
