ONE POT QUINOA RECIPE: Thai Green Curry Quinoa w/ Zucchini & Prawns


  • 1 Superlife Co. Thai Green Curry Quinoa Pack
  • 200g Mini Zucchini, cut into bite size chunks
  • 200g Prawns, cleaned and deveined
  • 200ml Water
  • 2tbsp Coconut Oil
  • 1/4 of a Lemon, cut into wedges
  • Salt/Pepper to taste

Takes , serves 2.


  1. Marinade the prawns with a pinch of salt and pepper
  2. Open up the Quinoa Pack and pour all contents from the pack into a rice cooker (NO RINSING NECESSARY, Superlife Co.’s Quinoa is certified saponin-free). 
  3. Into the rice cooker, add in the chopped zucchini and marinaded prawns.
  4. Add in water and coconut oil, and turn the rice cooker on!
  5. Serve the Thai Green Curry Quinoa mix in a bowl and squeeze a lemon wedge over it, to give it a hint of freshness. Yum!
