- 1 Superlife Co. Thai Green Curry Quinoa Pack
- 200g Mini Zucchini, cut into bite size chunks
- 200g Prawns, cleaned and deveined
- 200ml Water
- 2tbsp Coconut Oil
- 1/4 of a Lemon, cut into wedges
- Salt/Pepper to taste

- Marinade the prawns with a pinch of salt and pepper
- Open up the Quinoa Pack and pour all contents from the pack into a rice cooker (NO RINSING NECESSARY, Superlife Co.’s Quinoa is certified saponin-free).
- Into the rice cooker, add in the chopped zucchini and marinaded prawns.
- Add in water and coconut oil, and turn the rice cooker on!
- Serve the Thai Green Curry Quinoa mix in a bowl and squeeze a lemon wedge over it, to give it a hint of freshness. Yum!
