
Super Recipe – Guacamole Quinoa Bites
Here is a little Mexican-inspired quinoa recipe!
We love guacamole and we love quinoa, so why not put the two together and make it an easy pop-it-in-your-mouth snack?
Trust us, you won’t be able to put these bites down.
Ingredients
- 2 avocados, mashed
- 1 cup Superlife Co. Mixed Quinoa
- 2 cups of water
- ½ of an onion, diced
- A lemon wedge
- Panko bread crumbs
- Cayenne pepper
- Mexican seasoning (salt-free)
- Salt
- Pepper
- Olive oil
Directions
- Preheat an oven to 200 degrees Celsius.
- In a pot, add uncooked quinoa, 2 cups of water, a pinch of salt, cayenne pepper and Mexican seasoning. Cook the quinoa mix in either a rice cooker or a saucepan (until water has evaporated and quinoa is fully cooked).
- Add mashed avocados, diced onion, cooked quinoa, a pinch of salt, pepper, Mexican seasoning, cayenne pepper and a squeeze of lemon wedge in a bowl. Mix everything together!
- Take 1 tsp of guacamole/quinoa mix, shape it into a small patty and roll it in panko.
- Lightly coat your oven tray with olive oil and place the guacamole/quinoa bites on it.
- Bake your bites for 10 minutes.
- Take it out of the oven and flip the bites over. Stick it back in the over for another 15 minutes.
- Enjoy!
*The bites should be golden crispy on the outside and soft on the inside. Let it bake longer in the oven if necessary to get the crispy texture.
