Super Recipe – Quinoa Avocado Tomato Salad
We love quinoa salads! Sometimes the simpler, the better. The main ingredients for this salad recipe are avocados, tomatoes and quinoa, all brought together with a delicious balsamic vinaigrette. Give it a try! It will soon be your salad staple 😉 Ingredients
- 2 Avocados, chopped
- 250g Cherry Tomatoes, halved
- 1 tbsp Roasted Pine Nuts
- 3 cups cooked Superlife Co. Mixed Quinoa
- 2 tbsp Balsamic Vinegar
- 4 tbsp Olive Oil
- Pinch of Sea Salt
- Pinch of Black Pepper
- Pinch of Mixed Herbs
- In a small bowl, mix the balsamic vinegar, olive oil, sea salt, black pepper and mixed herbs together to make the salad sauce.
- In a big bowl, add in the avocados, tomatoes, pine nuts, quinoa and salad sauce, and mix it all together well.
- Serve and enjoy!
