Super Recipe – Quinoa Avocado Tomato Salad

We love quinoa salads! Sometimes the simpler, the better. The main ingredients for this salad recipe are avocados, tomatoes and quinoa, all brought together with a delicious balsamic vinaigrette. Give it a try! It will soon be your salad staple 😉     Ingredients

  • 2 Avocados, chopped
  • 250g Cherry Tomatoes, halved
  • 1 tbsp Roasted Pine Nuts
  • 3 cups cooked Superlife Co. Mixed Quinoa
  • 2 tbsp Balsamic Vinegar
  • 4 tbsp Olive Oil
  • Pinch of Sea Salt
  • Pinch of Black Pepper
  • Pinch of Mixed Herbs
Directions
  1. In a small bowl, mix the balsamic vinegar, olive oil, sea salt, black pepper and mixed herbs together to make the salad sauce.
  2. In a big bowl, add in the avocados, tomatoes, pine nuts, quinoa and salad sauce, and mix it all together well.
  3. Serve and enjoy!
